Recipe for Spicy Crab Cakes with sauteed garlic spinach and chive scrambled eggs

Who doesn’t love brunch? I know I do, so I thought instead of coming up with the traditional holiday dinner recipe, I’d offer up a brunch option. I typically split my time with my family on Christmas day, spending my mornings having breakfast with my dad and step-mom and then I head to my mom and step-dad’s house 2 hours away for dinner.

Because of that, I thought I would come up with a recipe for a holiday brunch to share with you all because maybe you are in a similar situation or maybe you want to host a Christmas Brunch instead of dinner. Either way, I wanted to put together something fairly easy, but still gives you that bit of oomph.

These spicy crab cakes are so universal that you can make mini versions of them for appetizers, you can pair them with your favorite salad or even make a sandwich! I topped the crab cakes with sauteed spinach and chive scrambled eggs, making this dish light yet flavorful, leaving room for Christmas dinner later in the afternoon/evening.
