I can’t say that I’ve ever had limoncello, so when I had the opportunity to receive a bottle of the LiDestri Pink Limoncello, I jumped at the chance. Limoncello is an Italian liqueur made with lemons and vodka that can be enjoyed alone or in a cocktail. LiDestri’s Pink Limoncello has a light lemon flavor and is delightful when chilled making it a tasty drink all on it’s own.
Considering how ungodly hot it has been in Atlanta, I decided to create a Summer cocktail that will be cooling and refreshing. I visited the Dekalb Farmers Market recently and while there I picked up a peach sorbet. Since it was not overly sweet (at least in my opinion) I thought it would pair well with the light lemon flavor from the pink limoncello. And who doesn’t love bubbles? I know I do, so I topped the cocktail off with a sparkling wine.
Ingredients (2 servings)
- 2 Tablespoon of Peach Sorbet
- 2 oz LiDestri Pink Limoncello
- Your favorite Sparkling Wine, Prosecco or Champagne
- Fresh mint for garnish
- 2 Champagne flutes
In a shaker, pour the limoncello over ice and shake well.
Put 1 tablespoon each of the peach sorbet into the champagne flutes. Add the chilled limoncello using a strainer. Top off the drink with your favorite sparkling wine, prosecco or champagne and garnish with fresh mint.
The bottle is gorgeous!
The Pink Limoncello comes in a beautiful 750ml bottle that I have to say looks gorgeous on my bar. And you can also get the equally adorable mini 50ml bottles that would be great as party favors and gifts. I so wish I’d known about this a few months ago as I would have definitely given these as gifts to the bridesmaids in Alexis wedding.
